How Can I Organise My Contacts In Different Groups On My IPhone?

To add someone to a group message, tap the message you wish to add them to. At the top of the thread, tap the group icons. Tap Add Contact after tapping the grey arrow symbol to the right of the contacts. Tap Done once you've typed in the contact you wish to add.
